Es besteht im derzeitigen Gebäude seit 1910 und wurde damals als Oberrealschule eingeweiht. Namensgeber war Georg Graf zu Münster (17761844), ein begeisterter Archäologe, der seinerzeit viele bedeutende Funde in der Region rund um Bayreuth machte, die größtenteils im Urweltmuseum in Bayreuth ausgestellt sind. Das Logo des Gymnasiums, der sogenannte Dino, nimmt darauf Bezug. Die Schule wurde als Kreis-Landwirtschafts- und Gewerbeschule auf Grund der Bildungsinitiative König Ludwigs I. von Bayern gegründet. Zunächst befand sie sich im alten Rathaus von Bayreuth. 1842 zog sie ins Künsberg-Palais um, wo sie bis 1910 verblieb. 1864 wurde sie in Kreisgewerbeschule umbenannt und später (1872) in Gewerbeschule. 1877 wurde sie in eine sechsjährige Realschule umgewandelt und in den Jahren 1907 bis 1909 in eine neunjährige. Ab 1910 erhielt sie den Namen Königliche Kreisoberrealschule für Oberfranken. Das Künsberg-Palais war zu klein geworden und die Stadt entschloss sich, die Schule in ihr heutiges, damals neuerrichtetes, Gebäude zu verlegen. In den beiden Weltkriegen diente die Schule als Lazarett. 1933 feierte man das 100-jährige Bestehen der Schule, welches, wie so viele Veranstaltungen in dieser Zeit, unter dem Einfluss der Nationalsozialisten stand. 1949 wurde im GMG das erste pädagogische Seminar eingerichtet, das bis heute junge Lehrer ausbildet. Von 1951 bis 1960 wurde, trotz großer Platznot und Schichtunterricht, im GMG das Hohenschwangauer Modell getestet, welches in etwa dem heutigen G9-Kollegstufenmodell entsprach. 1964 erhielt die Schule einen neusprachlichen Zweig mit Französisch als dritte Fremdsprache neben Englisch und Latein. Ab dem 14. ,März 1966 erhielt die Schule aufgrund der Umbenennung aller höheren bayerischen Lehranstalten die Bezeichnung Gymnasium und heißt seitdem Graf-Münster-Gymnasium. 1976 wurde die Kollegstufe eingeführt.
